This recipe turned out terribly. The rice seemed to be simultaneously overcooked and undercooked. Entire mixture was mushy, but rice was hard in the middle.
 
The first time I cooked it for 4 minutes, instapot was trying to cook it for 4 hours, had to stop it after 6 minutes.
 
THERE WAS NOT EVEN STEAM COMING OFF THE FOOD.
 
The second time, I cooked it for 4 minutes, and the food still looked undercooked from the top. It was brown and burned on the bottom of the pot.

Ingredients

  • 1/2 lb ground beef
  • 1 cup diced onions
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1 can kidney beans (drained)
  • 3 tablespoons taco seasoning
  • 1.5 teaspoons salt (optional)
  • 1 cup uncooked basmati rice
  • 1.25 cups water

NOTE: If recipe is doubled, only use 1.75 cups water

Directions

  • Sautee ground beef and onions in crock pot, cook for 3-5 min.
  • Add 1/4 cup water to pot, deglaze bottom of pot thoroughly
  • Add taco seasoning and salt and rice. Mix thoroughly.
  • Add 1 cup water. Scatter tomatoes, peppers, beans on top of rice and meat mixture. Do not mix.
  • Secure lid on pressure cooker
  • Cook on HIGH for 4 minutes
  • Release pressure naturally for 10 minutes
  • (Optional: add a fried egg on top)
