Ingredients
- 1/2 lb ground beef
- 1 cup diced onions
- 1 cup diced tomatoes
- 1 cup diced bell peppers
- 1 can kidney beans (drained)
- 3 tablespoons taco seasoning
- 1.5 teaspoons salt (optional)
- 1 cup uncooked basmati rice
- 1.25 cups water
NOTE: If recipe is doubled, only use 1.75 cups water
Directions
- Sautee ground beef and onions in crock pot, cook for 3-5 min.
- Add 1/4 cup water to pot, deglaze bottom of pot thoroughly
- Add taco seasoning and salt and rice. Mix thoroughly.
- Add 1 cup water. Scatter tomatoes, peppers, beans on top of rice and meat mixture. Do not mix.
- Secure lid on pressure cooker
- Cook on HIGH for 4 minutes
- Release pressure naturally for 10 minutes
- (Optional: add a fried egg on top)
