Ingredients

  • 1/2 cup flour
  • 1/2 cup butter or oil
  • 3 cups chicken broth
  • 1.25 lbs chicken thighs, cut in 1/2 inch pieces
  • 12 oz kielbasa sausage
  • cornstarch (optional)
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 can diced tomatoes (fire-roasted)
  • 5 oz frozen okra (optional)
  • 5-6 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 1 bay leaf

Directions

1. Put the Instant Pot to sauté mode and add the chicken and sausage. Brown the chicken and season with salt and pepper.

2. Add onion, garlic, and okra and sauté until softened, about 8 minutes. Add bell pepper halfway through so it sautés for 4 minutes.

3. Empty contents of pot into bowl (meat and veggies) and set aside.

4. Add flour and butter to pot to prepare roux. Cook 5-7 minutes, stirring constantly, until color of peanut butter.

5. Add chicken broth and mix in roux. Add meat and veggies. Add seasonings.

6. Set pressure cooker to "Chili/Soup" setting and cook for 8 minutes. Let stand 15 minutes

Notes

For truly Cajun style roux, add creole seasoning, gravy master (?), lemon juice, worcestershire sauce, zatarain's shrimp and crab boil.
