Ingredients

  • 1/2 cup flour
  • 1/2 cup butter or oil
  • 3 cups chicken broth
  • 1.25 lbs chicken thighs, cut in 1/2 inch pieces
  • 12 oz kielbasa sausage
  • raw crab or shrimp (thawed)
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 can diced fire-roasted tomatoes
  • 5-6 cloves garlic, minced
  • 5 oz frozen okra (optional)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 1 bay leaf

Directions

1. Put the Instant Pot to sauté mode and add the chicken and sausage. Brown the chicken and season with salt and pepper.

2. Add onion, garlic, and okra and sauté until softened, about 8 minutes. Add bell pepper halfway through so it sautés for 4 minutes.

3. Empty contents of pot into bowl (meat and veggies) and set aside.

4. Add flour and butter to pot to prepare roux. Cook 5-7 minutes, stirring constantly, until color of peanut butter.

5. Add chicken broth and mix in roux. Add meat and veggies. Add seasonings.

6. Set pressure cooker to "Chili/Soup" setting and cook for 8 minutes.

7. Once pressure is relieved, open lid and put Instant Pot into sauté mode. Season crab or shrimp with cajun seasoning. Add crab or shrimp and cook for 3-5 minutes.

8. Remove from heat and let cool. Serve with rice.

Notes

For truly Cajun style roux, add Recipes/Creole Seasoning, gravy master or Recipes/Browning Sauce, lemon juice, worcestershire sauce, zatarain's shrimp and crab boil.
