Known as blackening spice, can be rubbed on chicken, fatty fish, steaks, or veggies
Can be used for pan broiling, grilling, or sauteing
Transforms into tangy, deeply caramelized crust as food cooks
Expect spices to smoke during cooking
Ingredients
- 1 tbsp cracked black peppercorns
- 1 tbsp salt
- 2 tsp crushed fennel seeds
- 1 tsp dried thyme
- 1 tsp sweet/hot paprika
- 1 tsp dry mustard
- 1 tsp garlic powder
- 1/2 tsp ground red pepper
- 1 tsp sage
Directions
- Stir ingredients together into a small bowl
- Keeps for up to 6 weeks
