Ingredients
- 1.25 cups dried chickpeas
- 1/2 cup chopped onions
- 1/4 cup packed fresh parsely leaves
- 2 cloves garlic, chopped
- 2 tsp ground cumin
- 1.5 tsp salt
- 1/2 tsp ground coriander
- 1/2 tsp baking soda
- 1/4 tsp ground red pepper
- 2 tbsp all purpose flour
- vegetable oil
sauce:
- 1/4 cup tahini
- 1/4 cup cold water
- 1 tbsp fresh lemon juice
- pinch of salt
for serving:
- pita breads (~4)
- thinly sliced crisp lettuce, washed and dried
- tomato slices
- crushed red pepper
Directions
- Pick over and rise and soak the dry chickpeas
- Drain thoroughly, place in a food processor, and finely chop
- Add onion, parsely, garlic, cumin, salt, coriander, baking soda, ground red pepper
- Process until mixture is coarsely pureed
- Remove to bowl and stir in flour
- Form chickpea mixture with wt hands into 4 patties, about 3 inches in diameter
- Let stand 15 minutes
- pour 1/2 inch veggie oil into deep skillet
- Fry chickpea patties until golden brown on both sides
- Drain on paper towels
- Stir together tahini, cold water, lemon juice, salt to make serving sauce
- Heat pita bread in oven for 10 minutes
- Distribute lettuce and tomato into pita bread, then add falafel and drizzle tahini, add crushed red pepper
