Ingredients

  • 1.25 cups dried chickpeas
  • 1/2 cup chopped onions
  • 1/4 cup packed fresh parsely leaves
  • 2 cloves garlic, chopped
  • 2 tsp ground cumin
  • 1.5 tsp salt
  • 1/2 tsp ground coriander
  • 1/2 tsp baking soda
  • 1/4 tsp ground red pepper
  • 2 tbsp all purpose flour
  • vegetable oil

sauce:

  • 1/4 cup tahini
  • 1/4 cup cold water
  • 1 tbsp fresh lemon juice
  • pinch of salt

for serving:

  • pita breads (~4)
  • thinly sliced crisp lettuce, washed and dried
  • tomato slices
  • crushed red pepper

Directions

  • Pick over and rise and soak the dry chickpeas
  • Drain thoroughly, place in a food processor, and finely chop
  • Add onion, parsely, garlic, cumin, salt, coriander, baking soda, ground red pepper
  • Process until mixture is coarsely pureed
  • Remove to bowl and stir in flour
  • Form chickpea mixture with wt hands into 4 patties, about 3 inches in diameter
  • Let stand 15 minutes
  • pour 1/2 inch veggie oil into deep skillet
  • Fry chickpea patties until golden brown on both sides
  • Drain on paper towels
  • Stir together tahini, cold water, lemon juice, salt to make serving sauce
  • Heat pita bread in oven for 10 minutes
  • Distribute lettuce and tomato into pita bread, then add falafel and drizzle tahini, add crushed red pepper
