Ingredients

  • 1.5 lb ground beef or turkey (1 lb regular seasoned, .5 lb italian seasoned)
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 potato, cubed
  • 1 bell pepper (optional)
  • 5-6 cloves garlic, minced
  • 1.5 cups beef broth
  • 1 can kidney beans, drained
  • 1 can black or pinto beans, drained
  • 1 can chopped tomatoes, undrained (fire roasted are best)
  • 1 small can tomato paste
  • salt
  • pepper
  • paprika
  • cumin
  • ground red pepper
  • other spices (optional)

Directions

1. Put the Instant Pot into sauté mode and brown the ground meat, seasoning with salt and pepper

2. Add the garlic and onion to meat, sauté until soft, about 7 minutes. If adding bell peppers, they should be added halfway through to sauté for 3-4 minutes.

3. While vegetables are sautéing, prepare and drain cans of beans and tomatoes. Optionally, whisk dry spices together in a small bowl.

4. Pour in broth, beans, tomatoes, tomato paste, and spices, mixing ingredients.

5. Set pressure cooker to "Chili/Soup" setting. Cook for 22 minutes. Leave pressure relief valve open.

6. Relieve pressure and let cool. Serve with cheddar and sour cream.

Notes

Turkey is a leaner meat but still makes a very hearty chili

Leaving out the potato makes the chili much more tomato-heavy, and requires less liquid

Swapping out the seasoning can give the chili different flavors
